What are Cakesicles?
Cakesicles, also known as cake popsicles, are large cake pops made in a popsicle mold. Like a cake pop, cakesicles is made using cake crumbs, frosting, candy coating, and decorations.
Ingredients
Cake
To start, you will need cake crumbs. You can buy a premade cake or make one from a box or scratch. Then, use your hands or a stand mixer with a paddle attachment to crumble the cake into tiny crumbs. If you are making a cake from scratch, you will need to cool it before crumbling.
Use your favorite cake flavor or a flavor that matches your theme. I use my vegan strawberry cake. It is my family’s favorite! You can also use brownies with this recipe.
Frosting
You need frosting to bind the cake crumbs together. You will want to use frosting in the same color as your cake. The golden rule when it comes to frosting is less is more! If you use too much, your cake popsicles will be greasy, and no one wants that!
Tip – Start with a very small amount of frosting and mix it well into the cake crumbs. As you mix, you will find that a little frosting goes further than you expected. If it is still too little, then add more in small increments.
Coating
I recommend using candy melts for the coating. They are easy to find at most large grocery stores. You can use a white chocolate coating and add food coloring if you want a specific color. You can also purchase a specific color at most hobby stores or online.
Decorating
Once your cakesicles are coated, it’s time to decorate! The possibilities are endless, but here are a few ideas to get you started:
- Sprinkles: Sprinkles are a classic cakesicle decoration. You can find various sprinkles at craft stores and grocery stores. Try mixing different colors and shapes for a fun and festive look.
- Candy melts: Candy melts are another popular cakesicle decoration. They come in various colors and flavors and are easy to melt and use. You can dip your cakesicles in melted candy melts or use them to create intricate designs.
- Edible flowers: Edible flowers are a beautiful and elegant way to decorate your cakesicles. You can find edible flowers at some specialty grocery stores and online.
- Chocolate drizzle: Melted chocolate is a versatile and delicious cakesicle decoration. You can drizzle it over your cakesicles or use it to create designs such as hearts, stars, and flowers.
- Piping: If you’re feeling adventurous, use a piping bag to decorate your cakesicles with frosting, chocolate, or other toppings.
FAQ
This is usually due to not using enough frosting. Make sure to use enough frosting to hold the cake crumbs together.
The cake was not packed tightly into the mold, or too much frosting was added. Try repacking the cake. If that does not work, remove it, sprinkle a little flour, and remix.
This is usually due to using too much frosting. Make sure to use the correct ratio of cake crumbs to frosting.
If you use a chocolate coating, use high-quality chocolate that is melted and tempered correctly. If you are using a candy melt coating, melt the candy slowly and carefully.

Individual-Sized Sweets
Cakesicles (Cake Popsicles)
Equipment
- Cakesicle mold
- Popsicle sticks
- Microwave or double boiler
Ingredients
- 1 baked cake (9×13 the equivalent of a box of cake)
- 2 tablespoons frosting (30g)
- 3 cups melting wafers (678g)
- decorations
Instructions
Prepare the Cake
- Start with a room-temperature baked cake or cake scraps. Break the cake into crumbs using your hands or a mixer.
- Add 2 tablespoons of frosting per 1 box of cake crumbs (the equivalent of a 9×13 sheet cake) and mix until the cake becomes a ball. If using a different amount of cake, adjust the frosting accordingly.
Prepare the Cake Mold
- Melt the chocolate or candy melts according to the directions.
- Coat each cavity of the mold with 1-2 tablespoons of chocolate.
- Insert a popsicle stick into each cavity and move it around a few times to create space so the shell does not crack later.
- Place the mold in the freezer for 5-10 minutes.
Set the Cake
- Fill each cavity with 1/3 of the cake mixture.
- Move the popsicle stick halfway into the cavity and pack in the rest of the cake.
- Use your fingers to pack the cake very tightly and ensure there are no air gaps.
- Leave a 1/16-inch space between the top of the mold and the cake. This is the extra space needed to set the back of the cakesicke.
Set the Cakesicle Back
- Place about 1 tablespoon of chocolate on top of the cake, forming the back of the popsicle. Spread the chocolate evenly.
- Use an offset spatula or icing smoother to scrape off any excess chocolate.
- Freeze for 5-10 minutes.
Decorate
- Decorate the cakesicles as desired. Popular options include using sprinkles, candy melts, chocolate drizzle, edible glitter, or other decorations. See the notes for how to do this
Notes
- To prevent the cake from sticking to the mold, you can grease the mold with a little bit of butter or cooking spray.
- If you are having trouble getting the chocolate to stick to the cakesicles, try dipping them in a thin layer of melted chocolate first and then chilling them in the freezer for a few minutes before adding the main coating.
- To store cakesicles, place them in an airtight container and store them in the refrigerator for up to 1 week or in the freezer for up to 4 weeks.
