Cakesicles (Cake Popsicles) are large cake pops shaped into popsicles. They are perfect for any get-together! They are fun to decorate for any theme, including holidays, baby showers, and gender reveals!
Start with a room-temperature baked cake or cake scraps. Break the cake into crumbs using your hands or a mixer.
Add 2 tablespoons of frosting per 1 box of cake crumbs (the equivalent of a 9×13 sheet cake) and mix until the cake becomes a ball. If using a different amount of cake, adjust the frosting accordingly.
Prepare the Cake Mold
Melt the chocolate or candy melts according to the directions.
Coat each cavity of the mold with 1-2 tablespoons of chocolate.
Insert a popsicle stick into each cavity and move it around a few times to create space so the shell does not crack later.
Place the mold in the freezer for 5-10 minutes.
Set the Cake
Fill each cavity with 1/3 of the cake mixture.
Move the popsicle stick halfway into the cavity and pack in the rest of the cake.
Use your fingers to pack the cake very tightly and ensure there are no air gaps.
Leave a 1/16-inch space between the top of the mold and the cake. This is the extra space needed to set the back of the cakesicke.
Set the Cakesicle Back
Place about 1 tablespoon of chocolate on top of the cake, forming the back of the popsicle. Spread the chocolate evenly.
Use an offset spatula or icing smoother to scrape off any excess chocolate.
Freeze for 5-10 minutes.
Decorate
Decorate the cakesicles as desired. Popular options include using sprinkles, candy melts, chocolate drizzle, edible glitter, or other decorations. See the notes for how to do this

Additional Tips:
To prevent the cake from sticking to the mold, you can grease the mold with a little bit of butter or cooking spray.
If you are having trouble getting the chocolate to stick to the cakesicles, try dipping them in a thin layer of melted chocolate first and then chilling them in the freezer for a few minutes before adding the main coating.
To store cakesicles, place them in an airtight container and store them in the refrigerator for up to 1 week or in the freezer for up to 4 weeks.
How to Add Sprinkles or Other DecorationsTo add sprinkles or other decorations to a cakesicle, as pictured above, you need a base of warm chocolate or candy melts for the decoration to adhere to. There are two ways to do this:1. Fill a small bowl with sprinkles. Then, hold the cakesicle at an angle and dip it into the bowl of warm chocolate or candy melts, followed by the sprinkles.2. Fill a small piping bag with warm chocolate or candy melts and fit it with a small tip. Draw lines with the chocolate on the cakesicle and then add sprinkles or other decorations on top of the lines.
