Get ready for a cake that is loaded with delicious strawberry flavor!  This cake is so good it's my grandson's most requested cake!

CAKE INGREDIENTS

– Strawberries – Vegan milk – Apple cider vinegar –  Flour – Baking powder – Salt – Vegan butter – Sugar – Neutral oil – Vanilla extract

FROSTING INGREDIENTS

– Vegan cream cheese  – Vegan butter room temperature – Vanilla extract – Organic or vegan powdered sugar – Non-dairy milk – Pink gel food coloring optional

Step One: Strawberry Puree

Wash, dry, and hull the strawberries. Pulse strawberries into a liquid. Simmer to concentrate the sauce.

Step Two: Prep

Preheat the oven. Grease two 9-inch cake pans. Mix non-dairy milk and apple cider vinegar. Set aside.

Step Three: Mix Dry Ingredients

Mix dry ingredients, all-purpose flour, baking powder, and salt in a medium-sized bowl.  Set aside.

Step Three: Mix Cream Ingredients

In a large bowl cream together room-temperature butter, sugar, vanilla extract, and oil until smooth

Step Four: Combine Ingredients

Combine wet and dry ingredients.  Add the strawberry puree and the optional pink gel food coloring.

Step Five: Bake

Divide the batter into two greased pans. Place in the center of the oven and bake for 28 to 32 minutes.

Step Six: Frosting

Beat the cream cheese then add the butter.  Add the vanilla and powdered sugar in small increments.

Step Seven: Assemble

Let the cake cool then add the frosting.  Let the cake sit for 2 - 24 hours for the best flavor!
