Air fryer tomatoes are a fast and easy 10-minute recipe. Roasting tomatoes in the air fryer intensifies their flavor. This recipe is perfect for soups, sauces, bruschetta, side dishes, or, my favorite, on toast with cream cheese for breakfast!

If you are a roasted tomato lover like myself, you must try this air fryer roasted tomato recipe. The roasting intensifies the tomato’s flavor. The air fryer makes it quick and easy. The combination allows you to make a richer tomato sauce, sweeter soup, or perfect side.

I rave about vegan air fryer tomatoes all the time. After a couple of minutes of work, you will have roasted tomatoes that are sweeter than ever! I recommend using this recipe when you want a more intense tomato flavor.

My favorite is putting roasted tomatoes on toast with fresh basil and cream cheese. It’s the perfect breakfast, or in my case, an all-day snack!

Why Roast Tomatoes in the Air Fryer?

Ingredients

Balsamic Vinegar

Balsamic vinegar adds a tang to this recipe, helping balance out the sweetness of the tomato. If possible, I recommend using balsamic reduction or glaze. The reduction makes the vinegar sweeter!

Garlic

I recommend using fresh minced garlic. If that is not an option, you can substitute one teaspoon of garlic powder.

Oil

Oil helps the tomatoes cook evenly. Try to use a high-heat oil such as refined olive or avocado oil.

Tomatoes

The dish’s star, tomatoes, become more concentrated in flavor and slightly caramelized, enhancing their natural sweetness. I find cherry or grape tomatoes work best with this recipe.

How to Make Air Fryer Roasted Tomatoes

Step One: Prep

Preheat your air fryer to 400F/200C. Halve fresh tomatoes and place them in a large bowl. Toss the tomato halves with the oil, garlic, and balsamic vinegar. If you want more flavor, sprinkle the tomatoes with salt and pepper.

Step Two: Cook

Place the tomatoes in an air fryer basket in a single layer with the open side facing up. Roast for 10 minutes undisturbed.

Note: Cooking times can vary by air fryer and tomato size. Check on the tomatoes at the 8 minute mark to determine if you need to cook them longer.

How to Air Fry Tomatoes on the Vine

Set your air fryer at 400F/200C. for 8 to 10 minutes. Place the tomatoes in the basket and shake the basket halfway through the cooking time. Note that smaller tomatoes such as cherry or grape will need less time, closer to 8 minutes. Larger tomatoes will need the full 10 minutes.

Pro-Tip: How to Prevent Watery Tomatoes

Cut-Side Up

Place the halved tomato in the air fryer basket with the cut-side facing up. This allows the water to evaporate.

Leave Space

When placing the tomatoes in the air fryer basket leave space between each tomato. This allows the air to circulate.

Perfect Air Fryer Tomato Pairings

  • As a side with a good old-fashioned English breakfast.
  • On top of toast with cream cheese or bruschetta.
  • Mixed into vegan pasta puttanesca for a richer flavor.
  • On top of pizza or blended into a rich tomato sauce.

Do not peel the tomato. The skin helps to hold the tomato together during the roasting process. Without the skin, the tomato will disintegrate.

Yes, you can air-fry tomato slices. Cut into even slices, season as desired, and place them in a single layer in the air fryer basket. Check on them often, as the cooking time will differ by tomato and thickness.

You can technically use aluminum foil in the air fryer, but it’s important to do it the right way. The beauty of the air fryer is that it gives you crispy food without the need for a lot of oil. However, if you place something like tomatoes directly on the foil, it can block the airflow, leading to uneven cooking. It’s better to use foil on the bottom of the basket to catch crumbs and drippings, while still allowing the air to circulate properly around your food.

Look for smaller tomatoes.  My personal favorites are cherry, grape, or plum tomatoes.  

Storing and reheating: Roasted tomatoes are best enjoyed fresh. They can be stored in an airtight container for up to two days. The longer they are stored, the more they will lose their structure and become mushy.
