Make authentic Italian San Marzano tomato sauce from scratch in 30 minutes. You can simmer it longer for a deeper flavor. Use fresh or canned tomatoes, fresh herbs, and garlic to create your new authentic Italian tomato sauce (or gravy). This recipe is perfect for pasta, pizza, and anywhere else you would use spaghetti sauce!
Heat the butter or olive oil in a Dutch pot or large saucepan over lower heat until it shimmers. Add the onions and cook for 5 minutes.
Add the minced garlic and cook for 1 minute or until fragrant.
Add the tomato paste and cook until it darkens in color, about 2-3 minutes.
STEP ONE: SIMMER
Add the canned tomatoes and half of the fresh basil to the saucepan and stir to combine.
Bring the sauce to a gentle boil, stirring often, and simmer for 15-20 minutes or until the sauce has thickened and reduced slightly.
You can leave the sauce chunky, break it up with your wooden spoon for a semi-chunky sauce, or use a stick blender and blend for a smooth sauce.
