Make homemade lemon popsicles bursting with a fresh lemon flavor! You only need a few minutes of hands-on work plus six hours of freezing time. This recipe makes popsicles that are smooth in texture (aka, not icy!). The flavor is perfectly balanced between tart and sweet.
Place the lemon juice in sugar in a bowl and whisk together until fully combined. Add the water and whisk again to combine.
Pour the mixture into your mold, top, and insert the popsicle stick. Freeze for 6 hours.
To unmold the popsicles, run warm to hot water over the mold for 30 seconds. Gently release the popsicle from the mold.
Notes
Sugar Alternative
You can use honey or maple syrup instead of sugar.
To keep the texture right, use 1/3 cup (80g) of honey or maple syrup instead of 1/2 cup of sugar.
Reduce the water from 1 and 1/2 cups to 1 and 1/3 cups.
Whisk a bit longer to mix them well.
Funnel Tip
If you do not have a funnel, use a freezer bag with a small part of the corner cut off. This will create a homemade funnel.
Storing Instructions
After about 6 hours, when the popsicles are completely frozen, remove them from the mold. If they’re stuck, run warm water over the outside of the mold for a few seconds to help loosen them.
To store, place a sheet of wax paper at the bottom of an airtight container. Add a single layer of popsicles, then place another sheet of wax paper on top. Keep layering like this to prevent sticking. Seal the container and return it to the freezer for up to three months.
