Air fryer tomatoes is a 10-minute recipe that intensifies the flavor of the tomato. This recipe is highly versatile and perfect for soups, sauces, bruschetta, side dishes, or, my favorite, on toast with cream cheese for breakfast!
Halve fresh tomatoes and place them in a large bowl.
Marinate the tomato halves by tossing them with olive oil, Italian seasoning, balsamic vinegar, salt, and pepper for even coating.
Place the tomatoes in the bottom of the air fryer basket in a single layer with the open side facing up. Roast for 10 minutes undisturbed.
Notes
Storing and reheating: Roasted tomatoes are best enjoyed fresh. They can be stored in an airtight container for up to two days. The longer they are stored, the more they will lose their structure. As pictured: Tomatoes in the picture are on top of toasted bread with whipped vegan cream cheese. To whip cream cheese, use 8 ounces of cream cheese + 2 tablespoons of non-dairy milk and whip in a food processor for 3-5 quick pulses.Affiliate: The equipment section may contain affiliate links to products used in this recipe.
