Step One:  Mix Dry Ingredients

In a large bowl, whisk together the flour, salt, sugar, baking powder, and baking soda until evenly combined.

Step Two:  Add Vegan Butter

Add cubed cold vegan butter and work it into the dry ingredients until it resembles very loose, coarse crumbs

Step Three:  Mix Wet Ingredients

In a small bowl, whisk together the coconut cream and vanilla extract until they are blended together.

Step Four:  Add Wet Ingredients

Add the wet ingredients to the dry ingredients and lightly mix until the two are just barely combined.

Step Five:  Shape

Turn the dough out onto a lightly floured surface and pat into an 8-inch disk. Cut into eight equal wedges.

Step Six:  Brush the Top

Brush the tops of the scones with the leftover coconut milk and sprinkle with coarse sugar, if desired.

Step Seven:  Chill

Refrigerate the scones for 15 minutes before baking. This will help to chill the butter, which in turn creates flakes.

Step Eight:  Bake

Bake for 20-22 minutes or until golden brown. Cool on the baking sheet then transfer to a wire rack to cool completely.
