Start with warm water between 95 and 105 degrees. Add sugar. Sprinkle yeast on top and wait 5-10 minutes for the yeast to activate.
Roll the dough into a ball and rest for five minutes. Flatten into a disk and start the second prove.
Dip your fingers in olive oil and make indents 1/2 inch from the edge and all around the perimeter of the dough.
Continue to dip your fingers in olive oil and make 3 - 4 lines using your finger tips to make small indents.
Turn the sheet a quarter and repeat making the indents using you fingertips that have been dipped in olive oil.
