Vegan Strawberry Cake

Prep 1 Pound of Strawberries.  Pulse into 1 CUP OF liquid

STRAWBERRIES

COOK THE STRAWBERRIES UNTIL THE LIQUID IS REDUCED TO 1/2 CUP. 

REDUCE

PREP

PREHEAT  OVEN TO 350.  GREASE CAKE PANS

MIX DRY INGREDIENTS.  SET ASIDE. 

MAKE VEGAN BUTTERMILK.   SET ASIDE.

CREAM

Cream together vegan butter, sugar, vanilla extract and oil until smooth

COMBINE

Add vegan buttermilk and flour mixture to the whipped butter  in 1/3rd increments

ADD PUREE

ADD STRAWBERRY PUREE (REDUCTION) AND FOOD COLORING (OPTIONAL)

DIVIDE AND  BAKE

FROSTING

Beat together vegan cream cheese, vegan butter, powdered sugar and vanilla extract.  Add food coloring if desired.
