Ingredients

– Whole tomatoes  – Olive oil – Red Onions - Garlic – Tomato paste – Fresh basil leaves I recommend San Marzano tomatoes.

Optional Ingredients

– Add red pepper flakes to spice it up! – Add red wine for a depth of flavor – A touch of sugar  can reduce the tomato acidity

STEP ONE: PREP

– Heat the olive oil until it shimmers.  - Add the onions and cook for 2 minutes. – Add the  garlic and cook for 1 minute.

STEP TWO: TOMATOES

– Add the tomato paste and cook until it darkens in color, about 2-3 minutes. - Add the Whole Tomatos

STEP THREE: SIMMER

Add half of the fresh basil. Simmer for 15-20 minutes or until the sauce has thickened.

STEP THREE: CONSISTANCY

Keep the sauce chunky or use a stick blender to create a velvety smooth sauce.

Serve it Up!

While your spaghetti sauce is simmering, cook your pasta, drain, and toss the pasta with the spaghetti sauce.

Remember to Garnish

– Top with fresh basil  for a pop of flavor – Sprinkle parmesan cheese/vegan parmesan to add richness – A pinch of red pepper flakes to add spice!

Serve With Bread

While you are at it make homemade bread.  I have several recipes to choose from.  My favorite is the no knead dutch oven bread.
