Essential Middle Eastern Spice Guide

ALEPPO 

 Dark red pepper that is coarsely ground. It has a fruity, mild, raisin-like flavor.

HARISSA

A pepper ground into a paste. Popular in North Africa, harissa tastes great on fish and chicken.
