Lebanese Hummus

* Easy to make * No boiling! * Smooth and creamy texture * Better then store bought!

Ingredients

* Chickpeas (Garbanzo) * Baking soda * Lemon juice * Tahini * Garlic clove * Salt * Ice cubes * Olive oil  * Paprika (optional)

There are two keys to making perfectly smooth hummus.  To do this you need to: Remove the shells of the beans AND Pulse with two ice cubes!  

STEP ONE:  SOAK  

Soak garbanzo beans in water and baking soda for 5 - 10 minutes. This step makes it easier for the shells to pop off.

STEP TWO:  RUB SHELLS

Then rub the beans together to pop the shells off.   You don’t have to remove all the shells, aim for 80-90%

STEP THREE: PULSE  

Place garbanzo beans into a food processor and pulse 5-6 times or until the beans form a rough paste.

STEP FOUR: ADD INGREDIENTS 

Add fresh lemon juice, tahini and garlic. Pulse again. Your almost there, get ready for trick number two.

STEP FIVE:  ICE CUBES  

Add two ice cubes and pulse again.  The slow infusion of ice is necessary to add air and create creamy hummus!

STEP SIX:  DECORATE

Use the back of your spoon to create wells.  Pour olive oil into the wells. Dust north, south, west and east with paprika
