Colorado green chili is a sauce or stew made using fire-roasted green chiles and a Colorado staple!

History

Colorado green chili has its roots in the Pueblo culture. Rumor has it that green chile was popularized by miners and cowboys

Chiles

There are different varieties of green chilis, each slightly different. Pueblo green chiles are from Pueblo Colorado.

Ingredients

– white onion – olive oil – jalapeno - garlic cloves – green chiles – fire-roasted tomatoes – vegetable broth – cumin – salt – butter/vegan butter – flour

Instructions

Saute the onions.  Saute jalapeno and garlic green chile.  Add cumin broth and fire-roasted tomatoes.

Make the Roux: Melt the butter, then add flour, whisk in flour until smooth. Cook until golden brown.

Add the roux to the base. Reduce heat to low and simmer for 2 -3 hours on the stove or a slow cooker.

Colorado green chili can be enjoyed as a soup, sauce for burritos, enchiladas, eggs, or even a burger!
